Yummy Apple Pie

I love Apple Pie and my love for it started years ago, when I first visited “Julian”  a small town in California  famous for its delicious apple pie and cider. I enjoyed Julian’s laid back charm and its beautiful surroundings but what I loved the most was a slice of hot apple pie with a scoop of vanilla ice cream topped with a dollop of whipped cream… a true delight… just sooo very yummyy… Since then I too learned to make Apple pie at home…. and with every passing year I am mastering the art of apple pie making :) During class potluck all the class students enthusiastically participated in making Apple pie and enjoyed it thoroughly… Now its time for you all to try it at home as well….

Apple pie crust                                                                                                                        Two cups all purpose flour                                                                                                                    1 cup butter chilled and diced                                                                                                       pinch of salt                                                                                                                                             1 teaspoon sugar                                                                                                                                  Ice cold water

Directions:                                                                                                                                     1. Combine the flour and salt, sugar in a large bowl.                                                                     2. Cut in the butter until the mixture resembles coarse crumbs either using fingers or fork. 3. Stir in the ice cold water, a Tablespoon at a time, until the crust mixture forms a ball.     4. Now wrap dough in plastic wrap and refrigerate for 4 hours or overnight.                          5. Knead the dough. Sprinkle flour onto rolling surface. Divide the dough in  half.     Roll each half to fit the pie plate.

Apple Filling                                                                                                                               3,4 Green/Red fresh apples, peeled and sliced                                                                                 2 tbsp lemon juice                                                                                                                                  ½ cup sugar                                                                                                                                              1 level teaspoon ground cinnamon                                                                                                  1/2 teaspoon ground nutmeg                                                                                                               2 teaspoons all purpose flour                                                                                                           1/2 teaspoon melted butter                                                                                                                 Milk to glaze

Directions:                                                                                                                                     1. Placed sliced apples in a large bowl, add lemon juice, mix well.                                             2. Combine sugar, flour, cinnamon and nutmeg, butter in the apple mixture                         3. Take Pie plate and fill the  Now fill pastry with apple mixture, little more than the pan level                                                                                                                                                          4. Place crust in pie plate, pressing evenly into the bottom and sides.                                      5. Now place second crust on top of pie filling, seal the edges properly. Now cut slits in top of crust to vent.                                                                                                                                      6. Glaze the top crust with milk                                                                                                          7.  Bake at 400 degrees F or 200 degree Celsius for 30 min                                                            8. Serve hot or cold with Ice-cream
